This is hands down one of my most favourite recipe developments of all time.  It took me numerous attempts to get this recipe just right, more so for the dough than anything else. Well, after all the blood, sweat and tears (maybe not blood, but do oven burns count?) here it FINALLY is.  The ULTIMATE eliopitakia recipe (and I don’t say that lightly).  Reminiscent of Cyprus ? Yep.  Fragrant and delicious?  Indeed.  Moreish?  You...

I rarely bake a type of cake more than once, but this cake is GUARANTEED to be baking away in my oven every single year on the 30th of December.  It’s an absolute given that every New Years Eve, once the clock strikes midnight, the family and I will be huddled around the kitchen table indulging in Vasilopita.  And we’re not the only ones.  It’s a Greek and Cypriot tradition going back YEARS.  You see it’s not just any cake; th...

After making my first ever sourdough starter, it was high time I baked some sourdough pitas! After a little tweaking here and there, I’m absolutely thrilled with the results and I hope you’ll be too.

Thick, fluffy pitas, just like the ones from back home in Cyprus.  Apart from being the ideal side-kick for delicious souvlaki, they make a nice change to the ever so tedious square sandwich.  Plus you could dip them! Think tarama...

Exciting times are ahead people!  I’m absolutely over the moon to share this recipe with you all.  It’s a MUST Greek staple.  I think I’ve managed to get it right- it tastes just like the ones you can get in the Greek bakeries.  I gave the recipe to a mate of mine so she could make it for a family do and everyone loved it!  So if my Greek mate and her family all approve, it’s got to be a winner!  As a fellow Cypriot I know the...

If I wasn’t so well behaved with all this baking I do, I’d be in trouble.  Break the bathroom scales trouble.  I’m a master at resisting my own bakes, I’ve had to be.  I mean don’t get me wrong, I sample everything otherwise you can bet your sweet tush the recipes wouldn’t be on here, but that’s it.  One thing makes me cave in Every. Single. Time.

Baklava.  Game Over.

Shop bought Baklava, Restaurant Baklava,...

It’s that wonderful time of year again for all my fellow Greek and Cypriot Christians; Greek Easter.

To mark the occasion, us Greeks traditionally indulge in yummy Flaounes, a fragrant pastry encasing cheesy goodness.  The name doesn’t do it justice at all, but trust me on this one, they’re absolutely superb.

For any devoted Great British Bake Off fans out there, you may remember them from a few years back as one of the te...

March 30, 2018

This week I’ve channelled my inner Greek Goddess and whipped up something true to my heritage.  Yes, it’s the world known, ever so popular, ever so scrumptious Spanakopitta aka Spinach Pie.  Spinach, tick. Feta, tick.  Aromatic fresh herbs, tick.  Crunchy filo pastry, tick. Have I won you over yet?

This is a great recipe I've stumbled across on the internet, but I’ve adapted it to my own personal preference.  Fee...
