We all get the odd can’t be bothered to do life days don’t we? Alas, such a day inspired these super easy no bake ‘bounty’ bars. Low effort, immense flavour. You’re welcome. ‘Better than bounty’ is how one particular family member described it. Not to blow my own trumpet or anything but... toot blooming toot.
Five ingredients and you’re good to go.
Sweetened Condensed Milk. If you know, you know. You’ll know that it's heaven sent. Anything, absolutely ANYTHING that has condensed milk in it tastes glorious.
Desiccated Coconut. Always good to have lying around in your pantry, you’d be surprised what you can do with it! Biscuits, cakes, bounty bars...
Vanilla extract. Or, liquid gold as far as I’m concerned. Think about it. It’s virtually in all sweet treats.
Butter. A baker’s best friend. If you don’t have this in your fridge and you call yourself a baker, shame on you! Butter is the Holy Grail of the baking world. HOWEVER... if you don’t have this in your pantry, you CAN substitute with coconut oil as it’s a coco nutty situation.
Chocolate. Now don’t be a cheapskate here. The first time I made these I used regular baking chocolate, they were ok but in need of something, they lacked richness. I used Cadbury dairy milk chocolate the second time round and... oh, my, good, God. So a very important note: pick a good quality chocolate.
That’s all folks.
Makes: 20-25 depending on how big you want them!
Prep time: 1 hour (freezer)
Total Time: 2.5 hours (includes chilling)
400g desiccated coconut, a couple of tbsps extra for sprinkling
397g tin sweetened condensed milk
40g butter or coconut oil, melted
1 tsp of vanilla extract
500g good quality chocolate of choice
Combine the desiccated coconut, condensed milk, butter and vanilla extract in a medium sized bowl. Mix very well so that all the coconut is well covered and the mixture is sticky and binding together.
Pop in the freezer to firm up for an hour.
Melt the chocolate in the microwave in 30 second bursts, mixing each time until thoroughly melted. Set aside.
Using your hands, shape the mixture in rectangular bars about 3 inches long, mimicking the shape of a real bounty.
Drop the shaped bars in the melted chocolate and flip them over to coat both sides. Lift with a fork and place onto a wire rack with parchment/kitchen paper underneath to catch any drips of chocolate. Sprinkle some coconut flakes on top before the chocolate sets.
Pop in the fridge to set.
