Aren’t they just adorable? Look at those iddy biddy almondy balls! My Mr demands these on the regular and as they are SO easy to make, I happily oblige!
These cuties are great with coffee or just pop one (or several) in your mouth for a quick pick-me-up. I make 50 odd every time I bake them and Paul gobbles them up within a few days! I think it’s fair to say the boy likes his almonds; he’s even got my three year old hooked.
Store them in an airtight container and they’ll keep for at least two weeks.
Six ingredients is all you need to make these splendidly crunchy on the outside and chewy on the inside biscuits. Shop-bought amaretti are no match for these awesome baked goodies so don’t even think about it! In fact you could probably bake them yourself in the time it’ll take you to go out and buy some! Quick. Easy. Delicious. Let’s do this.

For the Biscuits:
300g ground almonds
200g granulated sugar plus extra for rolling
Pinch of salt
2 large eggs
1 tbsp amaretto liqueur or 1 tsp almond extract
Icing sugar, for rolling
Combine ground almonds, sugar and salt in a medium sized bowl. Add the eggs and amaretto liqueur/almond extract and stir well. Pop in the fridge for 20 minutes.
Meanwhile, put 5 tbsp of granulated sugar in a small bowl and 5 tbsp of icing sugar in another.
Preheat the oven to 175°C/155°C fan and line two baking trays with parchment paper.
Take the amaretti mixture out of the fridge and roll into 1.5tsp (1 dsp) sized balls. Roll the balls into the granulated sugar followed by the icing sugar, achieving a thin coat. Place onto the prepared baking trays leaving at least 1.5 inches of space apart as they will spread slightly when baked.
Bake for 15 minutes. Allow to cool for a minute on the baking tray before transferring on a wire rack to cool completely.
